Ingredients
Here’s everything you need to make this cheesecake:
For the Base:
200 g digestive biscuits
100 g unsalted butter, melted
For the Filling:
300 g cream cheese, softened
200 g white chocolate, melted (plus extra for decoration)
100 g icing sugar
200 ml heavy cream
100 g pistachios, shelled and roughly chopped
For the Topping:
50 g pistachios, roughly chopped (for garnish)
Shaved white chocolate (for decoration)

White Chocolate
Interestingly, white chocolate isn't technically classified as chocolate because it does not contain cocoa solids. It is made from cocoa butter, sugar, and milk solids. Despite this, it offers a creamy sweetness that can complement various desserts. In fact, about 33% of white chocolate is cocoa butter, which is essential for its rich texture.
Pistachios
Known for their vibrant green color, pistachios are not only delicious but also nutritious! They are high in protein, with about 20% of their weight consisting of protein. This makes them an excellent snack choice. Moreover, a 1-ounce serving of pistachios contains about 3 grams of fiber. They add a delightful crunch to our cheesecake while enhancing both flavor and texture.
Cream Cheese

Instructions

Begin by blending the digestive biscuits in a food processor until they are finley ground—similar to breadcrumbs.
Pour the melted unsalted butter into the biscuit mixture and mix until fully combined.
Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to create an even layer.
Step 2: Make the Filling
Now it’s time to create that creamy filling:
In a large mixing bowl, beat the softened cream cheese and icing sugar together with an electric mixer until smooth and creamy.
Slowly add in the melted white chocolate, ensuring it’s no longer hot. Whip until you achieve a uniform mixture.
In another bowl, whip the heavy cream until soft peaks form. Careful not to overmix. Gently fold the whipped cream into the chocolate mixture to keep it airy.
Finally, fold in the chopped pistachios, ensuring they are evenly distributed.
Step 3: Assemble the Cheesecake

Pour the creamy filling onto your prepared biscuit base and use a spatula to smooth the top.
