A Scandi Favourite!
Hopepunk is a spirit or a mood. It isn't an actual thing. It is a feeling. It is the Scandinavian concept of “hygge” or “cosiness” of the mind. It is a warm, happy, charming, uplifting concept that leaves you with a fuzzy feeling in your tummy.

Whilst the last year has been tough, I’ve never been prouder to work for the NHS as I am right now! The nice thing is, lots of people have also recognised the value the NHS brings to our society. Of course, we had the clapping in the early days, which still makes me cry(!), we’ve had numerous messages of support from members of the general public, cards, chocolates, biscuits, (people, it’s lovely and thank you but, it’s not helping my diet!!), and several businesses have stepped up to support front line workers, not just in the NHS but across the spectrum.
One such business was the Scandikitchen in swanky Fitzrovia, they were aware that NHS staff, particularly in the early days were finding difficult to get the most basic of food so, they made NHS workers a priority, even delivering across London. I was aware of Scandikitchen, I love Scandinavia and in particular I love the food, bowls of pickled herring served with rye and crispbread, beetroot and apple salad, meatballs, pâtés, and different types of cured and smoked salmon, and of course who can’t resist a smorgasbord! So, finding the Scandikitchen was a real happy moment. Not only do they sell the most beautiful prepared food, you can buy many ingredients which allow you to recreate your Scandi favs, Lingonberry Jam, Organic Rye Bread, hot and Sweet Mustard and Rye Kernels – yummy!
One of my favourite Scandi delicacies is Danish Dream Cake or, as it’s known to the locals; Droemmekage. Droemmekage is an old-fashioned cake but don’t let that put you off, it’s totally gorg! This cake has been made for generations and has been handed down through the years. If you only have to make one traditional Danish cake – the Droemmekage should be it!
Droemmekage simply means Dream Cake an appropriate name because when you taste it, it tastes like a dream on your tongue! The history for this cake originates from the small Danish town Hjallerup, Jutland which is located in the western part of Denmark. Back in 1960, a woman named Jytte Andersen participated in a cake baking contest held by a large food company in Denmark. In the contest she made the Droemmekage which turned out to be so good that it won! This was the beginning of a cake which later became probably the most famous cake in Denmark.
I have a couple of Danish friends who both remember making and eating, Droemmekage, countless times when they were kids. The cake is a simple cake based on flour, sugar, butter, eggs and milk. Subsequently, it’s dead easy to make! However, it's the coconut topping that gives the cake its characteristic taste. I LOVE coconut so I normally made double the recipe for an extra thick crust. I’ve served this cake several times and I’m yet to find anyone that doesn’t like it, even people that say that can’t stand coconut!
Here’s how you make it;
Ingredients
The Cake
250 g all-purpose flour
250 g sugar
50 g butter
3 large eggs
2dL of full cream milk
2 tsp baking powder
1 tsp vanilla sugar, (Scandikitchen sell vanilla sugar and they do mail order.)
The Topping
125 g butter
1/2 dL of full cream milk
200 g brown sugar
100 g coconut flakes
(As mentioned, if you want an extra thick crust simply double the recipe)
Instructions
1. Whisk eggs and sugar until light and fluffy in a bowl.
2. Melt the butter using a saucepan or microwave oven. Add the milk to the saucepan and stir. Add it to the bowl with eggs and sugar.
3. In a separate bowl; mix together all-purpose flour, vanilla sugar (essence) and baking powder. Add to the other bowl, and mix it all together into a smooth batter.
4. Line a baking pan (about 25x35 cm - 10x14 inch) with baking paper and pour the batter in it.
5. Bake the cake at 200 C (400 F) for about 20-25 minutes. When the cake is in the oven, prepare the coconut topping.
6. Coconut topping; melt the butter in a saucepan.
7. Add the milk and the brown sugar and let it simmer for about a minute.
8. Add the coconut flakes and mix it well.
9. When the cake has been in the oven for about 20-25 minutes. Take it out and pour the coconut mixture over the it. Use a knife to spread the topping evenly.
10. Bake the cake for another 10 minutes and it should be done, (if you’ve gone for the thick topping, give it 15 minutes). Let it cool off before serving it.
And that’s all there is to it!
I have a little confession, indulgence, if the cake is beyond two days old, it gets a little dry, to counter that I usually spread butter on it and have it with a little Cloudberry jam – to die for!!
